INCA is inspired by Nic Watt’s travels to Peru where he studied the art of Nikkei cuisine, specifically looking at the influence of Japanese pioneers migrating to Peru at the end of the 19th century.
The roots of this cultural cuisine fusion lie in the significance that both the Japanese and Peruvian traditions hero fresh fish, which is something Nic wanted to ensure complemented the INCA menu.
Critically acclaimed Chef Nic Watt, in collaboration with Chef Darren Johnson, are drawing inspiration from South American street food and East Asian cuisine to bring you INCA.

We require a deposit of $10 per person for bookings for 8 people and over. This deposit will be applied to your table’s bill when you dine with us.
